Rosie's Beef and Tomato Pepper Pot (Camp Oven)

Preparing the fire for the Camp Oven

Light your fire about one hour prior to when you are ready to cook.
This will give you enough time to generate a good bed of coals.
Use some hardwood as these coals work better.
When you are ready to put your camp oven in move all flames and burning timber away.
You only want to cook in the coals.
Prepare a bed of coals that will accommodate your camp oven and scrape a few aside to place on the lid.

You can adjust the heat of your camp oven by either adding or removing coals from the lid or scraping the coals away from under the camp oven. You can also lift the Camp Oven out of the fire and just leave a few coals on the lid to keep it simmering.



Ingredients

About 1 Kilo of Beef
2 cans of Peri Peri Tomatoes
2 good pinches of Coarse Cracked Pepper
I can diced Capsicums
2 tablespoons Tomato Paste
2 tablespoons of Gravox Powder
2 sliced Onions
1 clove of Garlic
Salt or (powdered Chicken Stock)
Water (one Peri Peri Tin full)


Method

Cut up the beef into strips or cubed
Add all ingredients into the camp oven
Place the camp oven onto the coals and scoop a small shovel of coals onto the lid.
Let cook for 30 to 40 minutes (check it a couple of times)
When it is cooked you should have beautifully tender meat and a very thick gravy.
